Description

Birria Tacos are a flavorful Mexican dish made with tender, slow-cooked beef, served in corn tortillas and topped with fresh ingredients.


Ingredients

  • 2 lbs beef chuck roast, cut into large chunks
  • 1 onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (15 oz) diced tomatoes
  • 3 dried guajillo chiles, stems and seeds removed
  • 2 dried ancho chiles, stems and seeds removed
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 bay leaf
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • 1 cup diced onion (for serving)
  • 1 cup crumbled queso fresco (for serving)

Instructions

  1. In a dry skillet over medium heat, toast the guajillo and ancho chiles for about 2-3 minutes until fragrant. Remove from heat and place in a bowl. Cover with hot water and let soak for 15 minutes. Drain and set aside.
  2. In a slow cooker, combine the beef chuck roast, quartered onion, minced garlic, beef broth, diced tomatoes, soaked chiles, cumin, oregano, smoked paprika, salt, pepper, and bay leaf.
  3. Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shredded.
  4. Once cooked, remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker and stir to combine with the juices.
  5. To assemble the tacos, heat a corn tortilla in a skillet over medium heat. Add a generous amount of the birria meat and top with chopped cilantro, diced onion, and crumbled queso fresco.
  6. Serve with lime wedges on the side for squeezing over the tacos.

Notes

  • For extra flavor, consider adding a splash of apple cider vinegar to the slow cooker for a tangy kick.
  • You can also serve the birria with a side of the broth for dipping the tacos, known as ‘consommé.’
  • For a vegetarian option, substitute the beef with jackfruit and adjust the spices accordingly.
