Ingredients

2 sheets puff pastry (store-bought or homemade)

2 tablespoons honey

100 grams blue cheese, crumbled (substitute with gorgonzola if preferred)

100 grams Parmesan cheese, grated

50 grams walnuts, chopped (can replace with pecans or hazelnuts)

6–8 sprigs fresh thyme leaves

1 tablespoon milk (for brushing)

Sea salt and pepper, to taste


Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F). For electric non-fan forced ovens, increase to 200°C (390°F).

  2. Prepare Puff Pastry: Lay the puff pastry sheets flat on a clean surface. Drizzle 1 tablespoon of honey over each sheet and spread it evenly using a spoon or brush.

  3. Add Toppings: Distribute the chopped walnuts, crumbled blue cheese, and grated Parmesan evenly over both sheets. Sprinkle with fresh thyme leaves and season with a pinch of sea salt and cracked pepper.

  4. Roll and Cut: Roll up each sheet tightly from one edge. Once rolled, slice each log lengthwise to expose the layers of filling. Tuck the edges to keep the filling intact.

  5. Twist and Shape: Place the cut pastry strips on parchment paper. Gently twist each strip and coil them into a round shape, securing the ends.

  6. Brush and Bake: Brush the tops of the pastry coils with milk for a golden finish. Bake for 25-30 minutes, or until puffed and golden brown.

  7. Serve: Remove from the oven, garnish with extra thyme leaves, and serve warm for the best taste and texture.
