Ingredients
Core Ingredients:
- 3 slices bacon, cut into ½-inch pieces
- 2 tbsp butter, divided
- 4 large eggs, whisked
- Salt and pepper, to taste
- 1 (17.5 oz) can refrigerated cinnamon roll dough
- 1¼ cups shredded Cheddar cheese
- 5 tbsp cream cheese, softened
Optional Add-Ins:
- Diced bell peppers
- Spinach
- Diced tomatoes
Instructions
- Cook the Bacon:
Heat a large skillet over medium-high heat. Add the bacon and cook for 5–8 minutes, stirring occasionally, until crispy. Transfer the bacon to a paper towel-lined plate to drain. - Preheat the Oven:
Preheat your oven to 400°F (200°C). Grease a 9-inch pie plate with cooking spray or butter. - Prepare the Eggs:
Melt 1 tablespoon of butter in a nonstick skillet over medium-low heat. Add the whisked eggs and cook, stirring constantly, until soft and fluffy (about 3–5 minutes). Season with salt and pepper. Set aside to cool slightly. - Prepare the Dough:
Open the cinnamon roll dough and press each roll flat into a rectangle, trapping the cinnamon sugar layers inside. Roll each rectangle into a thin circle about 6 inches wide. - Assemble the Breakfast Bombs:
Spread 1 tablespoon of softened cream cheese over each circle of dough. Layer ¼ cup scrambled eggs, ¼ cup shredded cheddar cheese, and 1 tablespoon of bacon pieces on top. Bring the dough edges up and pinch them together to fully enclose the filling. - Arrange and Brush:
Place the rolls seam-side down in the prepared pie plate. Melt the remaining tablespoon of butter and brush it over the tops of the rolls. Season lightly with salt and pepper. - Bake the Breakfast Bombs:
Bake in the preheated oven for 20–22 minutes, rotating halfway through, until golden brown. - Cool and Serve:
Let the bombs cool for about 15 minutes before serving. Enjoy warm, and feel free to garnish with extra green onions, chives, or salsa.
Notes
- Use High-Quality Ingredients: Fresh eggs, good-quality bacon, and sharp cheddar cheese will elevate the flavor.
- Customize the Fillings: Add vegetables like sautéed spinach, mushrooms, or bell peppers for a healthier twist.
- Reheat Gently: Warm leftover breakfast bombs in the oven at 350°F (175°C) for 10 minutes to maintain their texture.
- Dough Alternatives: Try crescent roll dough or puff pastry for different textures and flavors.
