  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large eggs
  • Fresh cilantro, chopped (for garnish)
  • Avocado slices (optional, for serving)
  • Shredded cheese (optional, for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground turkey or beef to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer and let it cook for 10 minutes, allowing the flavors to meld.
  5. Make four small wells in the chili mixture and crack an egg into each well. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired doneness.
  6. Remove from heat and garnish with chopped cilantro. Serve hot with avocado slices and shredded cheese if desired.
