Perfect for brunch, holiday gatherings, or meal prep, this dish combines fluffy eggs, tender veggies, and golden, melted cheese into one irresistible meal. Simple to prepare and bursting with flavor, this breakfast strata will become your go-to recipe for any occasion!

Ingredients

  • 8 oz wheat ciabatta bread (or sourdough), cut into 1-inch cubes
  • 12 oz turkey breakfast sausage (or chicken sausage), casings removed
  • 2 cups fat-free milk
  • 1½ cups reduced-fat shredded sharp cheddar cheese (4 ounces)
  • 10 large eggs
  • ½ cup chopped green onions
  • 1 cup sliced mushrooms
  • ½ tsp paprika
  • 1 tsp kosher salt
  • 2 tbsp grated Parmesan cheese

Instructions

Step 1: Prepare the Bread

  1. Cut the bread into 1-inch cubes. Spread the cubes on a baking sheet and toast them in a preheated oven at 350°F for 5–7 minutes. This step ensures the bread won’t become soggy as it absorbs the custard.

Step 2: Cook the Sausage

  1. In a skillet over medium heat, cook the sausage, breaking it into small pieces. Once browned and fully cooked, remove it from the skillet and set aside.

Step 3: Sauté the Vegetables

  1. Using the same skillet, add the sliced mushrooms and sauté for 3–4 minutes until softened. Add the chopped green onions and cook for another minute.

Step 4: Make the Custard

  1. In a large mixing bowl, whisk together the eggs, milk, kosher salt, paprika, and a dash of black pepper. Whisk until smooth and well-combined.

Step 5: Assemble the Strata

  1. Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Spread the toasted bread cubes evenly across the dish.
  3. Sprinkle the cooked sausage and mushroom mixture over the bread.
  4. Evenly distribute the shredded cheddar cheese over the top.
  5. Pour the egg custard mixture over everything, ensuring the bread is fully coated.

Step 6: Chill and Bake

  1. Cover the dish with plastic wrap and refrigerate for at least 1 hour or overnight.
  2. Preheat the oven to 375°F. Remove the plastic wrap and sprinkle grated Parmesan cheese on top.
  3. Bake the strata uncovered for 40–45 minutes or until the top is golden brown and the center is set.

Step 7: Serve and Enjoy

  1. Allow the strata to cool for 5–10 minutes before slicing. Serve warm, garnished with additional green onions if desired.

Notes

  • Bread Tip: Slightly stale or day-old bread works best to absorb the custard without falling apart.
  • Make It Ahead: Assemble the strata the night before and bake it fresh in the morning for an easy breakfast.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days. Reheat individual portions in the microwave or oven.
  • Freezing: To freeze, let the cooked strata cool completely, then wrap tightly in foil and freeze for up to 2 months. Thaw overnight in the fridge before reheating.
  • Customization: Add your favorite veggies like spinach, bell peppers, or zucchini, or experiment with different cheeses like Gruyere or mozzarella.
