Ingredients

  • Brie cheese (8 ounces, chilled in the freezer for 15 minutes)
  • Cranberry sauce or jam (1 cup)
  • Flaky sea salt (1 teaspoon)
  • Pecans (½ cup, finely chopped)
  • Fresh rosemary (4 sprigs, cut into small pieces)

Instructions

1. Preheat and Prepare:

  • Preheat your oven to 375°F (190°C).
  • Lightly spray mini muffin pans with nonstick spray.

2. Prepare the Puff Pastry:

  • Roll each puff pastry sheet to approximately 10×14 inches.
  • Cut each sheet into 24 equal squares using a sharp knife or pizza cutter.

3. Assemble the Bites:

  • Press a puff pastry square into each mini muffin cup, pricking the bottom with a fork to prevent puffing.
  • Place a small piece of Brie in each cup, followed by a dollop of cranberry sauce.
  • Sprinkle with a pinch of flaky sea salt and chopped pecans.

4. Bake:

  • Bake in the preheated oven for 18–20 minutes, rotating the pans halfway through for even cooking.
  • The bites are ready when the puff pastry is golden and puffed.

5. Garnish and Serve:

  • Let the bites cool for about 3 minutes in the pan before transferring to a serving platter.
