Instructions

- Preheat your oven to 375°F (190°C).
- Lightly spray mini muffin pans with nonstick spray.
2. Prepare the Puff Pastry:
- Roll each puff pastry sheet to approximately 10×14 inches.
- Cut each sheet into 24 equal squares using a sharp knife or pizza cutter.
3. Assemble the Bites:
- Press a puff pastry square into each mini muffin cup, pricking the bottom with a fork to prevent puffing.

- Sprinkle with a pinch of flaky sea salt and chopped pecans.
4. Bake:
- Bake in the preheated oven for 18–20 minutes, rotating the pans halfway through for even cooking.
- The bites are ready when the puff pastry is golden and puffed.
5. Garnish and Serve:
- Let the bites cool for about 3 minutes in the pan before transferring to a serving platter.
- Garnish each bite with a small sprig of fresh rosemary.
- Serve warm or at room temperature.
Notes
- Freezing Brie: Freezing Brie for 15 minutes before cutting makes it easier to slice and ensures even melting.
