Description

Brie phyllo cups with blackberry and thyme are the perfect balance of crispy, creamy, sweet, and savory. These bite-sized delights combine golden phyllo shells, melted brie cheese, sweet blackberry jam, and fresh thyme for an appetizer that’s as stunning as it is flavorful. Whether for a holiday gathering or a casual dinner party, these cups are sure to impress!

Ingredients

  • Mini phyllo shells (15, store-bought)
  • Blackberry jam (2 tablespoons)
  • Honey (2 tablespoons, plus extra for drizzling)
  • Brie cheese (3 ounces, rind removed and cut into small cubes)
  • Fresh blackberries (15, one for each phyllo shell)
  • Fresh thyme leaves (2–3 sprigs)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 325°F (165°C).
  • Arrange the mini phyllo shells on a baking sheet for easy assembly.

2. Add the Sweet Base:

  • Place a small amount of blackberry jam and honey in the bottom of each phyllo shell. This creates a sweet, flavorful foundation.

3. Add the Brie:

  • Place a cube of brie on top of the jam and honey mixture in each shell.

4. Bake to Perfection:

  • Bake the phyllo cups in the preheated oven for 6–8 minutes, or until the brie has melted and the phyllo shells are lightly browned.
  • Rotate the baking sheet halfway through for even cooking.

5. Garnish and Serve:

  • Top each phyllo cup with a fresh blackberry and a few thyme leaves.
  • Drizzle additional honey over the finished bites for added sweetness.
  • Serve immediately while warm for the best texture and flavor.

Notes

  • Quality Matters: Use high-quality brie for the creamiest, most flavorful results.
  • Make Ahead: Assemble the phyllo cups in advance and store them in the refrigerator until ready to bake.
  • Customizable: Swap out the blackberries and jam for other fruits and preserves like raspberries, figs, or apricots.
