Ingredients
- 2 cups cooked white rice
- 1 cup fresh broccoli florets (or frozen, thawed)
- 1 cup shredded sharp cheddar cheese
- 1/2 cup milk
- 1/4 cup cream cheese, softened
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (optional)
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the broccoli florets and sauté for about 3-4 minutes until they are bright green and slightly tender. If using frozen broccoli, cook until heated through.
- In a mixing bowl, combine the cooked rice, cheddar cheese, milk, cream cheese, garlic powder, onion powder, salt, and pepper. Stir until well combined.
- Add the rice mixture to the skillet with the broccoli. Stir everything together and cook for an additional 5-7 minutes, or until the cheese is melted and the mixture is heated through.
- If desired, sprinkle grated Parmesan cheese on top and let it melt for an extra cheesy finish.
- Remove from heat and serve warm.
Notes
- For added protein, mix in cooked chicken or turkey.
- Substitute the cheddar cheese with pepper jack for a spicy kick.
