Description

A creamy and comforting dish made with broccoli, cheddar cheese, and rice, perfect for a quick meal.

Ingredients

  • 2 cups cooked white rice
  • 1 cup fresh broccoli florets (or frozen, thawed)
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup milk
  • 1/4 cup cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the broccoli florets and sauté for about 3-4 minutes until they are bright green and slightly tender. If using frozen broccoli, cook until heated through.
  2. In a mixing bowl, combine the cooked rice, cheddar cheese, milk, cream cheese, garlic powder, onion powder, salt, and pepper. Stir until well combined.
  3. Add the rice mixture to the skillet with the broccoli. Stir everything together and cook for an additional 5-7 minutes, or until the cheese is melted and the mixture is heated through.
  4. If desired, sprinkle grated Parmesan cheese on top and let it melt for an extra cheesy finish.
  5. Remove from heat and serve warm.

Notes

  • For added protein, mix in cooked chicken or turkey.
  • Substitute the cheddar cheese with pepper jack for a spicy kick.
