A delicious recipe for Brown Sugar Pecan Roasted Sweet Potatoes, perfect as a side dish.
Ingredients
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1/4 cup brown sugar, packed
- 1/4 cup pecans, chopped
- 3 tablespoons unsalted butter, melted
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F.
- In a large bowl, combine the sweet potato cubes, melted butter, olive oil, brown sugar, cinnamon, salt, black pepper, and nutmeg. Toss until the sweet potatoes are evenly coated.
- Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
- During the last 5 minutes of roasting, sprinkle the chopped pecans over the sweet potatoes to toast them slightly.
- Remove from the oven and let cool for a few minutes before serving.
Notes
- For a richer flavor, try adding a pinch of cayenne pepper for a subtle kick.
- If you prefer a healthier option, substitute maple syrup for brown sugar and reduce the amount of butter.
