Ingredients
For the Crust:
- 1 ½ cups graham cracker crumbs
- ¼ cup sugar
- ⅓ cup melted butter
For the Filling:
- 2 cups cream cheese, softened
- ½ cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ cup chopped Reese’s peanut butter cups
- ½ cup chopped Butterfinger bars
For the Ganache:
- 1 cup heavy cream
- 1 ½ cups semi-sweet chocolate chips
Instructions
Prepare the Crust:
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter in a bowl until combined.
- Press mixture firmly into an 8×8 inch pan lined with parchment paper.
- Bake for 10 minutes, then let cool.
2. Make the Filling:
- Beat softened cream cheese, sugar, and vanilla extract until smooth.
- Add eggs one at a time, mixing until just combined.
- Fold in chopped Reese’s and Butterfinger.
3. Assemble and Bake:
- Spread filling over cooled crust.
- Bake for 40 minutes or until the center is set. Cool to room temperature.
4. Prepare the Ganache:
- Heat heavy cream until it simmers. Pour over chocolate chips and let sit for 5 minutes.
- Stir until smooth and glossy.
5. Add Ganache and Chill:
- Spread ganache over the cheesecake layer.
- Refrigerate for at least 4 hours or until set.
6. Slice and Serve:
- Cut into bars with a sharp knife. Serve chilled and enjoy!
