Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup colored sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add the egg, vanilla extract, and almond extract to the butter mixture, and mix until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Transfer the dough to a cookie press fitted with your desired shape disc. If you don’t have a cookie press, you can use a piping bag with a large star tip.
  6. Press or pipe the dough onto the prepared baking sheets, spacing them about 2 inches apart. If desired, sprinkle colored sprinkles on top of each cookie.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  8. Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chocolate variation, substitute 1/4 cup of the flour with unsweetened cocoa powder.
  • For a citrus twist, add the zest of one lemon or orange to the dough for added flavor.
