Instructions

  • Brown the Sausage
    • Heat vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook for 3–4 minutes, stirring occasionally, until browned. Remove from the pot and set aside.
  • Cook the Vegetables
    • In the same pot, add the diced onion, celery, and red bell pepper. Sauté for 5–8 minutes, stirring occasionally, until the vegetables are softened.
    • Add the minced garlic and cook for an additional minute, releasing its aroma.
  • Build the Soup Base
    • Sprinkle Cajun seasoning, salt, black pepper, paprika, and cayenne pepper over the sautéed vegetables. Stir to coat evenly.
    • Add the chicken broth and cubed potatoes. Bring to a boil, then reduce the heat and let it simmer for 20–25 minutes, or until the potatoes are tender.
  • Add the Sausage and Cream
    • Return the browned sausage to the pot. Stir in the heavy whipping cream and shredded cheddar cheese.
    • Simmer for an additional 5 minutes, allowing the cheese to melt and the flavors to meld.
  • Garnish and Serve
