Instructions
- Brown the Sausage
- Heat vegetable oil in a large pot over medium heat. Add the sliced andouille sausage and cook for 3–4 minutes, stirring occasionally, until browned. Remove from the pot and set aside.
- Cook the Vegetables
- In the same pot, add the diced onion, celery, and red bell pepper. Sauté for 5–8 minutes, stirring occasionally, until the vegetables are softened.
- Add the minced garlic and cook for an additional minute, releasing its aroma.
- Build the Soup Base
- Sprinkle Cajun seasoning, salt, black pepper, paprika, and cayenne pepper over the sautéed vegetables. Stir to coat evenly.
