Ingredients
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1 cup shredded sharp cheddar cheese
- 1/4 cup chopped fresh chives
- 1/4 teaspoon black pepper
- Cooking oil or additional butter for frying
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
- Fold in the shredded cheddar cheese, chopped chives, and black pepper.
- Heat a skillet or griddle over medium heat and add a little cooking oil or butter.
- Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.
- Remove from the skillet and keep warm while you repeat with the remaining batter.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper to the batter.
- Serve with a dollop of sour cream or Greek yogurt on top for extra creaminess.
