Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1/4 teaspoon black pepper
  • Cooking oil or additional butter for frying

Instructions

  1. In a large bowl, whisk together the flour, baking powder, and salt.
  2. In a separate bowl, combine the milk, egg, and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Fold in the shredded cheddar cheese, chopped chives, and black pepper.
  5. Heat a skillet or griddle over medium heat and add a little cooking oil or butter.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes.
  7. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.
  8. Remove from the skillet and keep warm while you repeat with the remaining batter.
