Cheesy Corn Fritters are a delicious and easy-to-make snack or appetizer, perfect for any occasion.
Ingredients
- 1 cup fresh or frozen corn kernels
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup milk
- 1 large egg
- 2 tablespoons chopped fresh chives (optional)
- Vegetable oil for frying
Instructions
- In a large bowl, combine the corn, flour, baking powder, salt, and black pepper. Mix well to combine.
- In a separate bowl, whisk together the milk and egg until smooth.
- Pour the milk mixture into the dry ingredients and stir until just combined. Fold in the cheddar cheese, Parmesan cheese, and chives if using.
- Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
- Once the oil is hot, drop spoonfuls of the batter into the skillet, flattening them slightly with the back of the spoon. Fry for about 3-4 minutes on each side or until golden brown.
- Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Serve warm with your favorite dipping sauce or sour cream.
Notes
- For a spicier kick, add 1/4 teaspoon of cayenne pepper or diced jalapeños to the batter.
- Substitute the cheddar cheese with feta or pepper jack for a different flavor profile.
