Description
A delightful dessert recipe combining cherries and amaretto in a classic tiramisu.
Ingredients
- 2 cups fresh cherries, pitted and halved
- 1 cup amaretto liqueur
- 1 cup heavy cream
- 8 ounces mascarpone cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup strong brewed coffee, cooled
- 24 ladyfinger cookies
- Cocoa powder, for dusting
Instructions
- In a medium bowl, combine the pitted cherries and 1/2 cup of amaretto. Let them soak for at least 30 minutes to infuse the flavor.
- In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
- Gently fold the mascarpone cheese into the whipped cream until well combined.
- Dip each ladyfinger briefly into the cooled coffee mixed with the remaining 1/2 cup of amaretto, ensuring they are soaked but not soggy.
- In a 9×9-inch dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, then layer half of the cherries on top.
- Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
- Before serving, dust the top with cocoa powder for a finishing touch.
Notes
- For a lighter version, substitute half of the mascarpone with Greek yogurt.
- You can also use frozen cherries if fresh ones are not available; just thaw and drain them before use.
