Description

A delightful dessert recipe combining cherries and amaretto in a classic tiramisu.


Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 1 cup amaretto liqueur
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup strong brewed coffee, cooled
  • 24 ladyfinger cookies
  • Cocoa powder, for dusting

Instructions

  1. In a medium bowl, combine the pitted cherries and 1/2 cup of amaretto. Let them soak for at least 30 minutes to infuse the flavor.
  2. In a separate bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, continuing to whip until stiff peaks form.
  3. Gently fold the mascarpone cheese into the whipped cream until well combined.
  4. Dip each ladyfinger briefly into the cooled coffee mixed with the remaining 1/2 cup of amaretto, ensuring they are soaked but not soggy.
  5. In a 9×9-inch dish, layer half of the soaked ladyfingers at the bottom. Spread half of the mascarpone mixture over the ladyfingers, then layer half of the cherries on top.
  6. Repeat the layers with the remaining ladyfingers, mascarpone mixture, and cherries.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
  8. Before serving, dust the top with cocoa powder for a finishing touch.

Notes

  • For a lighter version, substitute half of the mascarpone with Greek yogurt.
  • You can also use frozen cherries if fresh ones are not available; just thaw and drain them before use.
