Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups cooked chicken, shredded
  • 2 cups fresh spinach
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

Prep and Cook

  1. Preheat the Oven: Set oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the Noodles: Boil lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  3. Sauté Aromatics: Heat olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until translucent. Add garlic and cook for 1 minute.

Prepare Mixtures

  1. Chicken Alfredo Mixture: Stir in chicken, spinach, Alfredo sauce, and Italian seasoning. Cook until spinach wilts. Season with salt and pepper.
  2. Cheese Mixture: Combine ricotta, half the mozzarella, and half the Parmesan in a bowl. Mix well.

Assemble the Lasagna

  1. Spread a thin layer of the chicken Alfredo mixture in the baking dish.
  2. Layer 3 lasagna noodles over the sauce.
  3. Spread half the cheese mixture over the noodles. Top with half the remaining chicken Alfredo mixture.
  4. Repeat layers and finish with a final layer of noodles, the remaining chicken Alfredo mixture, and the rest of the mozzarella and Parmesan cheese.

Bake

  1. Cover with foil and bake for 25 minutes. Remove foil and bake for another 15 minutes until cheese is bubbly and golden.

Rest and Serve

  1. Let lasagna cool for 10 minutes before slicing. Garnish with parsley and serve warm.
