Delicious and easy-to-make Chicken Avocado Ranch Burritos filled with shredded chicken, avocado, and ranch dressing.
Ingredients
- 2 cups cooked chicken, shredded
- 1 ripe avocado, diced
- 1 cup shredded cheddar cheese
- 1 cup ranch dressing
- 1 cup lettuce, shredded
- 1 medium tomato, diced
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, diced avocado, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Lay out the flour tortillas on a clean surface.
- Divide the chicken mixture evenly among the tortillas, placing it in the center of each.
- Top each with shredded lettuce, diced tomato, and shredded cheddar cheese.
- Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top.
- Heat olive oil in a skillet over medium heat. Place the burritos seam-side down in the skillet and cook for about 2-3 minutes on each side until golden brown and crispy.
- Remove from the skillet and let cool for a minute before slicing in half.
Notes
- For a spicier kick, add diced jalapeños or a splash of hot sauce to the chicken mixture.
- You can substitute the chicken with black beans or grilled vegetables for a vegetarian option.
