Delicious Chicken Bacon Ranch Quesadillas filled with shredded chicken, crispy bacon, and melted cheese, perfect for a quick meal.
Ingredients
- 2 cups cooked chicken, shredded
- 6 slices cooked bacon, crumbled
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the shredded chicken, crumbled bacon, cheddar cheese, mozzarella cheese, ranch dressing, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Heat a large skillet over medium heat and add the olive oil.
- Place one tortilla in the skillet and spread a generous portion of the chicken mixture over half of the tortilla.
- Fold the tortilla in half and cook for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
- Repeat with the remaining tortillas and filling.
- Serve warm with extra ranch dressing for dipping.
Notes
- For a spicier kick, add diced jalapeños or a sprinkle of cayenne pepper to the chicken mixture.
- Substitute the ranch dressing with buffalo sauce for a tangy twist, or use a different cheese like pepper jack for added flavor.
