Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cooked chicken, chickpeas, cherry tomatoes, cucumber, red onion, parsley, and feta cheese (if using).
- In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
