Ingredients
- 1 tablespoon olive oil
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 zucchini, sliced
- 1 carrot, julienned
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon ginger powder
- Salt and pepper to taste
- 1 tablespoon sesame seeds (optional)
Instructions
- Heat the olive oil in a large skillet or wok over medium heat.
- Add the garlic and sauté for 1 minute until fragrant.
- Add the carrots, bell peppers, zucchini, and broccoli to the skillet. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
- Drizzle the soy sauce and sesame oil over the veggies and sprinkle with ginger powder, salt, and pepper. Stir well to coat.
- Continue to cook for another 2-3 minutes, allowing the flavors to meld.
- Remove from heat and serve. Garnish with sesame seeds if desired.
