Description
Delicious Chicken Fajita Quesadillas that are easy to make and perfect for the whole family.
Ingredients
- 2 cups cooked chicken, shredded
- 1 bell pepper, sliced (any color)
- 1 small onion, sliced
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream (for serving)
- 1/2 cup salsa (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, and sauté for about 5 minutes until softened.
- Stir in the shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until everything is heated through.
- Remove the skillet from heat and set aside.
- Heat a separate skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle half of it with 1/2 cup of shredded cheese.
- Spoon a portion of the chicken and vegetable mixture over the cheese, then sprinkle another 1/2 cup of cheese on top. Fold the tortilla in half.
- Cook for 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
- Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.
Notes
- For a spicier kick, add sliced jalapeños to the chicken mixture.
- For a vegetarian option, substitute the chicken with black beans and add more vegetables like zucchini or corn.
