Description

Delicious Chicken Fajita Quesadillas that are easy to make and perfect for the whole family.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 bell pepper, sliced (any color)
  • 1 small onion, sliced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (for serving)
  • 1/2 cup salsa (for serving)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, and sauté for about 5 minutes until softened.
  2. Stir in the shredded chicken, chili powder, cumin, garlic powder, salt, and black pepper. Cook for an additional 3-4 minutes until everything is heated through.
  3. Remove the skillet from heat and set aside.
  4. Heat a separate skillet or griddle over medium heat. Place one tortilla in the skillet and sprinkle half of it with 1/2 cup of shredded cheese.
  5. Spoon a portion of the chicken and vegetable mixture over the cheese, then sprinkle another 1/2 cup of cheese on top. Fold the tortilla in half.
  6. Cook for 3-4 minutes on each side until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  7. Cut each quesadilla into wedges and serve warm with sour cream and salsa on the side.

Notes

  • For a spicier kick, add sliced jalapeños to the chicken mixture.
  • For a vegetarian option, substitute the chicken with black beans and add more vegetables like zucchini or corn.
