Ingredients
For the Chicken:
- 2 pounds boneless, skinless chicken thighs (about 6–8 thighs)
- 2 tablespoons vegetable oil
For the Marinade:
- ½ cup lime juice (fresh or bottled)
- ¼ cup honey
- 2 tablespoons chopped cilantro
- 2 tablespoons minced garlic
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon onion powder
- 1 teaspoon kosher salt
- ½ teaspoon cayenne pepper
Instructions
Step 1: Marinate the Chicken
- In a large bowl, whisk together lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne pepper.
- Add the chicken thighs to the marinade, ensuring they are well coated.
- Cover and refrigerate for at least 20 minutes or up to 4 hours for a deeper flavor.
Step 2: Sear & Bake the Chicken
- Preheat oven to 400°F (200°C).
- Heat vegetable oil in an oven-safe skillet over medium-high heat.
- Remove the chicken from the marinade (reserving the marinade) and sear for 2-3 minutes per side until browned.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the internal temperature reaches 165°F (74°C).
Step 3: Create the Sticky Glaze
- While the chicken bakes, pour the reserved marinade into a saucepan.
- Bring to a boil over medium heat, then reduce and simmer for 5-10 minutes until thick and sticky.
Step 4: Serve & Enjoy
- Brush the glaze over the cooked chicken.
- Serve warm with cilantro lime rice, roasted vegetables, or fresh tortillas.
Notes
- Marinate for at Least 20 Minutes: The longer the marination, the deeper the flavors. Avoid marinating for more than 4 hours to prevent the chicken from becoming too soft.
- Sear for a Golden Crust: Searing locks in moisture and adds texture before baking.
- Use Fresh Lime Juice: Fresh lime juice gives a more vibrant and zesty flavor than bottled versions.
- Save the Marinade: Simmering the reserved marinade creates a flavorful, sticky glaze to brush over the cooked chicken.
