Instructions

Step 1: Marinate the Chicken

  1. In a large bowl, whisk together lime juice, honey, cilantro, garlic, chili powder, cumin, onion powder, salt, and cayenne pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated.

Step 2: Sear & Bake the Chicken

  1. Preheat oven to 400°F (200°C).
  2. Heat vegetable oil in an oven-safe skillet over medium-high heat.
  3. Remove the chicken from the marinade (reserving the marinade) and sear for 2-3 minutes per side until browned.
  4. Transfer the skillet to the oven and bake for 8-10 minutes, or until the internal temperature reaches 165°F (74°C).

Step 3: Create the Sticky Glaze

  1. While the chicken bakes, pour the reserved marinade into a saucepan.
  2. Bring to a boil over medium heat, then reduce and simmer for 5-10 minutes until thick and sticky.
