Description

Delicious Chipotle Honey Salmon Tacos topped with fresh Pineapple Salsa.


Ingredients

  • 1 pound salmon fillet
  • 2 tablespoons honey
  • 2 tablespoons chipotle sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup diced fresh pineapple
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced (optional)

Instructions

  1. Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  2. In a small bowl, mix together honey, chipotle sauce, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper.
  3. Place the salmon fillet on the prepared baking sheet and brush the mixture evenly over the top.
  4. Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. Remove from the oven and let it cool for a few minutes before flaking it into bite-sized pieces with a fork.
  5. While the salmon is baking, prepare the pineapple salsa by combining diced pineapple, red onion, cilantro, and lime juice in a medium bowl. Stir well and season with salt to taste.
  6. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. Assemble the tacos by placing a generous amount of flaked salmon on each tortilla, topping with pineapple salsa, and adding avocado slices if desired.
  8. Serve immediately and enjoy!
