Description
Delicious Chipotle Honey Salmon Tacos topped with fresh Pineapple Salsa.
Ingredients
- 1 pound salmon fillet
 - 2 tablespoons honey
 - 2 tablespoons chipotle sauce
 - 1 tablespoon olive oil
 - 1 teaspoon garlic powder
 - 1 teaspoon cumin
 - 1 teaspoon smoked paprika
 - Salt and pepper to taste
 - 8 small corn tortillas
 - 1 cup diced fresh pineapple
 - 1/2 cup diced red onion
 - 1/4 cup chopped fresh cilantro
 - 1 lime, juiced
 - 1 avocado, sliced (optional)
 
Instructions
- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
 - In a small bowl, mix together honey, chipotle sauce, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper.
 - Place the salmon fillet on the prepared baking sheet and brush the mixture evenly over the top.
 - Bake the salmon for 12-15 minutes, or until it flakes easily with a fork. Remove from the oven and let it cool for a few minutes before flaking it into bite-sized pieces with a fork.
 - While the salmon is baking, prepare the pineapple salsa by combining diced pineapple, red onion, cilantro, and lime juice in a medium bowl. Stir well and season with salt to taste.
 - Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
 - Assemble the tacos by placing a generous amount of flaked salmon on each tortilla, topping with pineapple salsa, and adding avocado slices if desired.
 - Serve immediately and enjoy!

- For extra crunch, add shredded cabbage or lettuce to the tacos.
