Ingredients
- 2 cups cooked chicken, shredded
- 1 cup fresh pineapple, diced

- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika

- 8 small corn tortillas
- 1 cup red cabbage, shredded
- 1 avocado, sliced

Instructions
- In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and diced pineapple.
- Stir in the minced chipotle in adobo sauce, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally, until heated through and well combined.
- While the chicken mixture is cooking, warm the corn tortillas in a separate skillet over low heat for about 30 seconds on each side until pliable.
- To assemble the tacos, place a generous scoop of the chipotle pineapple chicken mixture onto each tortilla.
- Top with shredded red cabbage, avocado slices, and chopped cilantro.
- Serve with lime wedges on the side for squeezing over the tacos.
