A refreshing and vibrant Cilantro Lime Pasta Salad perfect for summer gatherings or as a light meal.
Ingredients
- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1 cup black beans, rinsed and drained
- 1/2 cup red onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup lime juice (about 2 limes)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 avocado, diced (optional)
Instructions
- Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, corn, black beans, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt, and pepper.
- Pour the dressing over the pasta salad and toss gently to combine.
- If using, fold in the diced avocado just before serving to prevent browning.
- Chill in the refrigerator for at least 30 minutes to allow flavors to meld before serving.
Notes
- For added protein, consider mixing in grilled chicken or shrimp.
