Ingredients
For the Vanilla Cookie Dough:

- 1½ cups all-purpose flour
For the Cinnamon-Sugar Filling:
- 1 large egg white
- 1 tablespoon water
- 1/4 cup granulated sugar
- 1½ teaspoons ground cinnamon
For the Icing:
- 1/2 cup powdered sugar
- 2 tablespoons heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
Instructions
- Prepare the Cookie Dough:
- Cream butter, powdered sugar, vanilla, and salt until fluffy.
- Add flour and mix until the dough comes together.
- Flatten into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
- Roll and Add Filling:
- Roll the chilled dough into a 9×12-inch rectangle on a floured surface.
- Whisk egg white and water; brush over the dough.
- Mix sugar and cinnamon; sprinkle evenly over the dough.
- Roll and Chill:
- Roll the dough into a tight log starting from the long side.
- Wrap in plastic wrap and freeze until firm (30 minutes to 1 hour).
- Slice and Bake:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Slice the log into 1/2-inch cookies and place on the sheets.
- Bake for 12–15 minutes until edges are golden. Cool for 5 minutes before transferring to a wire rack.
- Prepare Icing:
- Whisk powdered sugar, cream, vanilla, and cinnamon until smooth.
- Drizzle or spread over cooled cookies.
