Ingredients

For the Vanilla Cookie Dough:

  • 3/4 cup ( sticks) unsalted butter
  • 1/2 cup powdered sugar
  • 1½ teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1½ cups all-purpose flour

For the Cinnamon-Sugar Filling:

  • 1 large egg white
  • 1 tablespoon water
  • 1/4 cup granulated sugar
  • 1½ teaspoons ground cinnamon

For the Icing:

  • 1/2 cup powdered sugar
  • 2 tablespoons heavy whipping cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon

Instructions

  • Prepare the Cookie Dough:
    • Cream butter, powdered sugar, vanilla, and salt until fluffy.
    • Add flour and mix until the dough comes together.
    • Flatten into a disk, wrap in plastic wrap, and refrigerate for 1 hour.
  • Roll and Add Filling:
    • Roll the chilled dough into a 9×12-inch rectangle on a floured surface.
    • Whisk egg white and water; brush over the dough.
    • Mix sugar and cinnamon; sprinkle evenly over the dough.
  • Roll and Chill:
    • Roll the dough into a tight log starting from the long side.
    • Wrap in plastic wrap and freeze until firm (30 minutes to 1 hour).
  • Slice and Bake:
    • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
    • Slice the log into 1/2-inch cookies and place on the sheets.
    • Bake for 12–15 minutes until edges are golden. Cool for 5 minutes before transferring to a wire rack.
  • Prepare Icing:
    • Whisk powdered sugar, cream, vanilla, and cinnamon until smooth.
    • Drizzle or spread over cooled cookies.
