Description
A refreshing and crunchy salad made with apples, celery, grapes, and walnuts, dressed in a creamy yogurt dressing.
Ingredients
- 3 cups diced apples (about 3 medium apples, preferably Granny Smith or Honeycrisp)
- 1 cup diced celery (about 2 stalks)
- 1 cup red grapes, halved
- 1 cup walnuts, chopped
- 1 cup plain Greek yogurt
- 2 tablespoons honey
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Lettuce leaves for serving (optional)
Instructions
- In a large mixing bowl, combine the diced apples, diced celery, halved grapes, and chopped walnuts.
- In a separate small bowl, whisk together the Greek yogurt, honey, lemon juice, salt, and black pepper until smooth.
- Pour the yogurt dressing over the apple mixture and gently toss until everything is well coated.
- Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve on a bed of lettuce leaves if desired, and enjoy!
Notes
- For added sweetness, consider mixing in a handful of dried cranberries or raisins.
- Substitute the walnuts with pecans or almonds for a different flavor and texture.
