- 1 teaspoon chili oil (optional, for extra heat)
- 1 teaspoon crispy fried garlic (optional)
- ¼ cup fresh cilantro, chopped
- 2 scallions (green parts), sliced thin
Instructions
Step 1: Build the Coconut Curry Base
- Heat 1 tablespoon of oil in a large pot over medium heat.
- Add chopped onion, white parts of scallions, and garlic. Sauté until softened, about 2-3 minutes.
- Stir in the sliced mushrooms and cook for another 2 minutes, until softened.
- Add the Thai red curry paste, soy sauce, and sugar. Stir well and cook for 1 minute to release the flavors.
- Pour in the vegetable broth and bring the mixture to a gentle simmer.
