Ingredients

  • 2 (6-ounce) salmon fillets
  • 1 cup coconut milk
  • 1/2 cup chicken broth
  • 1 tablespoon lime juice
  • 1 teaspoon lime zest
  • 1 teaspoon fresh ginger, grated
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a medium saucepan, combine the coconut milk, chicken broth, lime juice, lime zest, ginger, garlic, salt, and black pepper. Stir well to combine.
  2. Bring the mixture to a gentle simmer over medium heat.
  3. Once simmering, carefully add the salmon fillets to the saucepan, skin-side down.
  4. Cover the saucepan and poach the salmon for about 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Remove the salmon from the saucepan and place it on a serving plate.
  6. Spoon some of the coconut-lime broth over the salmon and garnish with fresh cilantro.
  7. Serve with lime wedges on the side.
