Ingredients

  • 1/2 cup almond flour

  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. In a mixing bowl, combine the crushed pineapple, shredded coconut, almond flour, honey (or maple syrup), vanilla extract, and salt. Mix well until all ingredients are thoroughly combined.
  2. Refrigerate the mixture for about 30 minutes to help it firm up, making it easier to shape.
  3. Once chilled, use your hands to form small bite-sized balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  4. If using chocolate chips, melt them in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle or dip the coconut bites in the melted chocolate.
  5. Return the bites to the refrigerator for an additional 15 minutes to set the chocolate (if used) and firm up the bites.
