A creamy and healthy dessert made with cottage cheese and ripe bananas, perfect for a nutritious treat.
Ingredients
- 2 cups cottage cheese
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1/2 cup vanilla yogurt
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts or pecans (optional)
- 1/4 cup mini chocolate chips (optional)
Instructions
- In a large mixing bowl, combine the cottage cheese, mashed bananas, vanilla yogurt, honey or maple syrup, vanilla extract, and ground cinnamon. Mix well until all ingredients are fully incorporated and smooth.
- If desired, fold in the chopped walnuts or pecans for added crunch and flavor.
- Taste the mixture and adjust sweetness if necessary by adding more honey or maple syrup.
- Spoon the pudding into individual serving bowls or a large serving dish.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld and the pudding to chill.
- Before serving, sprinkle mini chocolate chips on top if using.
Notes
- For a dairy-free version, substitute cottage cheese with silken tofu and use coconut yogurt.
- Add a layer of crushed graham crackers or granola at the bottom of the serving bowls for added texture.
