Ingredients
- 2 cups black beans, drained and rinsed
- 1 cup corn, drained (canned or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/2 cup bell pepper (any color), diced
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup olive oil
- 1/4 cup lime juice (about 2 limes)
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the black beans, corn, cherry tomatoes, red onion, bell pepper, cilantro, and jalapeño (if using).
- In a separate small bowl, whisk together the olive oil, lime juice, garlic powder, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture and toss gently to combine.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
