Ingredients

  • 12 large morel mushrooms, cleaned and stems removed
  • 8 ounces cream cheese, softened
  • 1 cup lump crab meat, drained and picked over for shells
  • 1/4 cup green onions, finely chopped
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F.
  2. In a mixing bowl, combine the cream cheese, crab meat, green onions, Parmesan cheese, garlic powder, lemon juice, salt, and pepper. Mix until well blended.
  3. Carefully stuff each morel mushroom cap with the crab mixture, pressing gently to fill them completely.
  4. In a separate bowl, mix the breadcrumbs with olive oil until evenly coated.
  5. Place the stuffed mushrooms on a baking sheet lined with parchment paper. Sprinkle the breadcrumb mixture evenly over the stuffed mushrooms.
  6. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the tops are golden brown.
  7. Remove from the oven and let cool for a few minutes before serving.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the crab mixture.
  • If you can’t find morel mushrooms, substitute with large button mushrooms for a similar texture.
