Description

Cranberry Lime Snowball Cookies are buttery, melt-in-your-mouth delights filled with tangy cranberry preserves and zesty lime. These festive cookies are coated in powdered sugar for a snowy finish, perfect for the holidays or any special occasion.

Ingredients

Cookie Dough:

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • Zest of 1 lime
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • ¼ tsp salt

Filling:

  • ½ cup cranberry preserves

Coating:

  • Additional powdered sugar for coating

Instructions

  • Preheat Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream Butter and Sugar
In a large bowl, cream the butter, powdered sugar, and lime zest with an electric mixer until light and fluffy.
  • Mix Dough
Stir in vanilla extract. In a separate bowl, whisk together flour and salt, then gradually add to the butter mixture. Mix until a soft dough forms.
  • Shape Cookies
Scoop about 1 tablespoon of dough, flatten slightly, and place a dollop of cranberry preserves in the center. Wrap the dough around the filling to form a ball, ensuring the preserves are fully enclosed.
  • Bake
Arrange balls on the prepared baking sheet, spacing them about 1 inch apart. Bake for 12–15 minutes, until the bottoms are lightly golden.
  • Coat in Sugar
Cool cookies slightly, then roll them in powdered sugar while still warm. Once cooled, roll them again for a snowy finish.

Notes

  • Storage: Store in an airtight container at room temperature for up to 5 days.
  • Customization: Substitute lime zest with lemon or orange for a citrus twist, or try different fruit preserves for the filling.
  • Freezing Tip: Freeze baked cookies in an airtight container for up to 3 months. Thaw before serving.
