Description
A delicious and healthy creamy avocado chicken salad that combines shredded chicken with a creamy avocado dressing.
Ingredients
- 2 cups cooked chicken, shredded or diced
- 1 ripe avocado, mashed
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/4 cup celery, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped (optional)
- Lettuce leaves or whole grain bread for serving
Instructions
- In a large mixing bowl, combine the mashed avocado, Greek yogurt, Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Mix until smooth and well combined.
- Add the shredded chicken, celery, red onion, and cilantro (if using) to the bowl. Gently fold the ingredients together until everything is evenly coated with the avocado mixture.
- Taste and adjust seasoning if necessary, adding more salt, pepper, or lemon juice as desired.
- Serve immediately on a bed of lettuce leaves or as a filling in whole grain bread for a sandwich.
- For best flavor, refrigerate the salad for 30 minutes before serving to allow the flavors to meld.
