- 4 slices (~120g/4 oz) streaky bacon
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 5 large carrots, cut into chunks (about 1.5 cm thick)
- 4 cups (1 liter) vegetable or chicken broth
- 1/2 cup (125 ml) cream
- 3/4 cup (185 ml) milk (any fat percentage)
- Salt and pepper to taste

Instructions
Step 1: Prepare the Ingredients
- Chop the onion and garlic.
- Cut the carrots into 1.5 cm thick chunks.
- Cook the bacon, then chop it into small pieces after it cools.
Step 2: Cook the Bacon
- Heat olive oil or butter in a large pot over medium-high heat.
- Add the bacon and cook until golden and crispy.
- Remove the bacon from the pot, let it cool, and chop it into small pieces.
Step 3: Sauté the Aromatics
- In the same pot, add the chopped onion and minced garlic to the bacon drippings.
- Cook for about 2 minutes, stirring frequently, until the onion becomes translucent but not browned.
Step 4: Add the Carrots and Broth
- Stir in the carrot chunks, coating them well with the oil and aromatics.
- Pour in the vegetable or chicken broth, ensuring the carrots are fully submerged.
- Cover the pot with a lid and simmer for 20–25 minutes until the carrots are very soft.
Step 5: Blend the Soup
- Remove the pot from the heat and use a stick blender to puree the soup until smooth.
- Alternatively, let the soup cool slightly and blend in batches using a countertop blender. Return to the pot if using a blender.
Step 6: Add Cream and Milk
- Stir in the cream and milk, mixing until fully incorporated.
- Season with salt and pepper to taste. Adjust the consistency with more milk or water if desired.
Step 7: Serve and Garnish
- Ladle the soup into bowls.
- Garnish with a swirl of cream, crispy bacon pieces, and a sprinkle of fresh thyme or parsley.
- Serve warm with crusty bread on the side.
