Description
A comforting and delicious casserole made with chicken, broccoli, and rice, topped with melted cheddar cheese.
Ingredients
- 2 cups cooked chicken, shredded or diced
 - 2 cups broccoli florets, steamed
 - 1 cup uncooked white rice
 - 2 ½ cups chicken broth
 - 1 cup cream of chicken soup
 - 1 cup shredded cheddar cheese
 - 1 teaspoon garlic powder
 - 1 teaspoon onion powder
 - ½ teaspoon black pepper
 - 1 teaspoon salt
 - ½ cup breadcrumbs (optional)
 - 2 tablespoons olive oil (if using breadcrumbs)
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a large mixing bowl, combine the cooked chicken, steamed broccoli, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, black pepper, and salt. Stir until well mixed.
 - Pour the mixture into a greased 9×13-inch baking dish.
 - If using breadcrumbs, mix them with olive oil in a small bowl, then sprinkle evenly over the casserole.
 - Cover the baking dish with aluminum foil and bake for 45 minutes.
 - Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
 - Let the casserole cool for 5-10 minutes before serving.
 
Notes
- For a healthier option, substitute brown rice for white rice and use low-fat cream of chicken soup.
 - Add your favorite vegetables, such as bell peppers or carrots, for extra flavor and nutrition.
