Ingredients
- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tbsp olive oil or butter
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 package (5.2 oz) Boursin Cheese (Garlic & Fine Herbs flavor)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Season and Sear the Chicken:
- Pat chicken breasts dry and season with salt, pepper, and paprika (if using).
- Heat olive oil or butter in a skillet over medium-high heat.
- Sear chicken for 4-5 minutes per side until golden brown. Remove from the skillet and set aside.
- Prepare the Boursin Sauce:
- Lower heat to medium and deglaze the skillet with chicken broth, scraping up any browned bits.
- Stir in heavy cream and Boursin cheese, mixing until smooth.
- Simmer to Perfection:
- Return chicken to the skillet, spoon sauce over the top.
- Simmer for 8-10 minutes until chicken is cooked through (internal temp of 165°F).
- Serve and Enjoy:
- Garnish with fresh parsley.
- Serve over pasta, rice, or roasted vegetables.
Notes
- For a lighter version, use half-and-half instead of heavy cream and a light Boursin cheese.
- To prevent the sauce from splitting, keep the heat at medium-low when adding cream and cheese.
- Let the chicken rest for a few minutes after cooking to retain its juices.
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream or broth.
