Ingredients
For the Chicken:
- 2 lbs. organic chicken breasts (or substitute with thighs/drumsticks)
- 2 tbsp extra virgin olive oil
- 1 tsp sea salt
- 2 tsp all-purpose seasoning blend
For the Sauce:
- 4 tbsp unsalted butter
- 1 tbsp extra virgin olive oil
- 4 garlic cloves, minced
- 1 ½ tbsp Tuscan seasoning blend (store-bought or homemade)
- 1 tsp sea salt
- 1 ½ cups heavy cream
- 1 cup chicken stock or broth
- 3 tbsp white cooking wine (optional; replace with chicken broth if desired)
- ½ lemon, freshly squeezed
- 1 cup freshly grated parmesan
- 1 tbsp tomato paste
- 1–2 cups grape or cherry tomatoes
- 1 cup chopped organic kale
Instructions
- Prepare the Chicken:
Season chicken breasts with sea salt and the all-purpose seasoning blend. Let them rest for 5–10 minutes to absorb the flavors. - Sear the Chicken:
Heat a skillet over medium-high heat. Melt butter and sauté garlic until fragrant (1–2 minutes). Add chicken and sear for 3–4 minutes on each side until golden brown. Remove chicken and set aside. - Make the Sauce:
In the same skillet, add olive oil and Tuscan seasoning. Stir in tomato paste and lower the heat to medium-low. Gradually pour in heavy cream, chicken stock, lemon juice, and white wine. Let it simmer gently for 1–2 minutes, then whisk in grated parmesan until the sauce thickens. - Add Vegetables and Simmer:
Stir in chopped kale and tomatoes, blending them into the creamy sauce. Return the seared chicken to the skillet, spooning the sauce over the top. - Simmer Until Tender:
Cover and let the dish simmer for 15–20 minutes, occasionally stirring to prevent sticking. Ensure chicken reaches an internal temperature of 165°F. - Serve:
Pair with pasta, rice, vegetables, or crusty bread to soak up the sauce.
Notes
- Roasting the tomatoes before adding them intensifies their flavor.
- Feel free to customize the seasoning blend with herbs like oregano, thyme, rosemary, and paprika.
- Substitute heavy cream with half-and-half or coconut cream for dietary preferences.
