Description

Ingredients

  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 1 pound salmon fillet, skinless
  • Salt and pepper, to taste
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh lemon juice
  • Fresh basil, for garnish (optional)

Instructions

  1. Cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium-high heat. Season the salmon fillet with salt and pepper, then add it to the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove the salmon from the skillet and set aside.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for 2-3 minutes until they start to soften. Stir in the baby spinach and cook until wilted.
  5. Reduce the heat to low and pour in the heavy cream, stirring to combine. Add the Parmesan cheese, Italian seasoning, and lemon juice. Mix well until the cheese is melted and the sauce is creamy.
  6. Flake the cooked salmon into bite-sized pieces and gently fold it into the sauce. If the sauce is too thick, add some reserved pasta water to reach your desired consistency.
  7. Toss the cooked pasta in the sauce until well coated. Serve immediately, garnished with fresh basil if desired.

  • For a lighter version, substitute half-and-half for heavy cream.
