Ingredients

  • pounds russet or Yukon gold potatoes, peeled and halved
  • 4 tablespoons butter (unsalted preferred)
  • 89 ounces creme fraiche
  • ¼ cup heavy cream (or substitute milk or half & half)
  • 1 teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground pepper
  • Chives, chopped (optional, for garnish)

Instructions

1.     Prepare the Potatoes:
Peel and halve the potatoes for even cooking. Place them in a large pot, cover with salted water, and bring to a boil.

2.     Cook Until Fork-Tender:
