Ingredients
For the Zucchini Chips:
- 1 medium zucchini (about 8 ounces)
- ½ teaspoon kosher salt
- Cooking spray (as needed)
- 2 tablespoons grated Parmesan cheese (divided)
- ½ teaspoon garlic powder (divided)
For the Herby Yogurt Dipping Sauce:
- 1 small clove garlic (finely grated)
- 2 teaspoons fresh basil leaves (finely chopped)
- ¼ cup plain yogurt (whole-milk or 2%)
- ½ teaspoon grated Parmesan cheese
- Pinch of kosher salt
- Freshly ground black pepper (to taste)
Instructions
- Prepare the Zucchini Chips:
- Slice the zucchini into thin rounds, about 1/8-inch thick, using a mandoline or sharp knife.
- Toss zucchini slices with kosher salt and spread them on paper towels. Let sit for 5–10 minutes to draw out excess moisture.
- Make the Dipping Sauce:
- In a small bowl, combine grated garlic, chopped basil, yogurt, Parmesan cheese, salt, and pepper. Mix until smooth. Garnish with more basil if desired and set aside.
- Preheat the Air Fryer:
- Heat the air fryer to 370°F. Grease the air fryer basket with cooking spray to prevent sticking.
- Season and Cook the Zucchini Chips:
- Pat the zucchini slices dry with paper towels.
- Arrange in a single layer in the air fryer basket. Lightly spray with cooking spray and sprinkle with 1 tablespoon of Parmesan and ¼ teaspoon of garlic powder.
- Air fry for 7–8 minutes until golden and crispy. Check halfway through and remove smaller chips that are done.
- Repeat the Process:
- Repeat the air frying steps for the remaining zucchini slices, seasoning and patting them dry as needed.
- Serve and Enjoy:
- Serve the chips warm with the herby yogurt dipping sauce.
