Description

Ingredients

  • 2 lbs Yukon Gold or Russet potatoes, cut into wedges
  • ¼ cup olive oil
  • 3 tablespoons fresh lemon juice

  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon ground cinnamon (optional, for warmth)
  • ½ teaspoon red pepper flakes (optional, for heat)
  • ½ cup crumbled feta cheese
  • ¼ cup chopped fresh parsley

Instructions

  1. Preheat the Oven – Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Prepare the Potatoes – In a large bowl, toss potato wedges with olive oil, lemon juice, garlic, oregano, paprika, salt, pepper, and cinnamon (if using).
  3. Arrange on a Baking Sheet – Spread the potatoes in a single layer, making sure they aren’t overcrowded to allow for crisping.
