  • 2 tablespoons milk

Instructions

  1. In a medium bowl, combine the chopped rhubarb, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well to coat the rhubarb with the dry ingredients.
  2. In another bowl, whisk together the egg, milk, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  4. In a large skillet, heat about 1 inch of vegetable oil over medium heat until hot (around 350°F).
