Description

These Crispy Taco Cupcakes take all the bold flavors of your favorite tacos and transform them into a fun, bite-sized dish. Made with layers of seasoned beef, melted cheese, and crispy wonton wrappers, they are the perfect party appetizer, family dinner, or snack. Easy to make, customizable, and absolutely delicious!


Ingredients

  • 12 wonton wrappers
  • 1/2 lb ground beef (or ground turkey)
  • 1/2 packet taco seasoning
  • 1/4 cup water
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup sour cream (for topping)
  • 1/4 cup chopped lettuce (for topping)
  • 1 tablespoon chopped cilantro (optional)
  • Cooking spray

 


Instructions

  • Preheat & Prep: Preheat your oven to 375°F (190°C) and grease a muffin tin with cooking spray.
  • Cook the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  • Season & Add Beans: Stir in the taco seasoning and water. Simmer for 2-3 minutes until thickened, then mix in the black beans.
  • Layer the Cupcakes: Place a wonton wrapper in each muffin cup. Add a spoonful of the beef mixture and sprinkle with cheddar cheese. Add another wonton wrapper on top, followed by more beef and Monterey Jack cheese.
  • Bake to Perfection: Bake for 12-15 minutes, or until the wonton wrappers turn golden and crispy.
  • Top & Serve: Let them cool slightly, then garnish with lettuce, diced tomatoes, sour cream, and cilantro.

Notes
