Description

Crispy Vegan Vegetable Cutlets are a delicious and healthy snack made with mashed potatoes and mixed vegetables, perfect for any occasion.


Ingredients

  • 2 medium potatoes, boiled and mashed
  • 1 cup mixed vegetables (carrots, peas, and corn), steamed and chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon fresh cilantro, chopped (optional)
  • Oil for frying


Instructions

  1. In a large mixing bowl, combine the mashed potatoes and steamed mixed vegetables.
  2. Add the breadcrumbs, all-purpose flour, garlic powder, onion powder, cumin powder, paprika, salt, and pepper. Mix well until all ingredients are evenly combined.
  3. If using, fold in the chopped cilantro for added flavor.
  4. Shape the mixture into small patties or cutlets, about 1/2 inch thick.
  5. Heat oil in a frying pan over medium heat. Once hot, carefully place the cutlets in the pan, making sure not to overcrowd.
  6. Fry each cutlet for about 3-4 minutes on each side or until golden brown and crispy.
  7. Remove the cutlets from the pan and place them on paper towels to absorb excess oil.
  8. Serve hot with your favorite dipping sauce or chutney.
