Description

Crock Pot Cheesy Scalloped Potatoes are a creamy and delicious side dish made with layers of thinly sliced potatoes, onions, and sharp cheddar cheese, all cooked to perfection in a slow cooker.


Ingredients

  • 4 large russet potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1 cup milk
  • 3 tablespoons butter, melted
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional for a kick)
  • 1/4 cup chopped fresh parsley (for garnish)

Instructions

  1. Grease the inside of the Crock Pot with cooking spray or a little butter to prevent sticking.
  2. Layer half of the sliced potatoes in the bottom of the Crock Pot. Top with half of the sliced onions and half of the shredded cheese.
  3. In a medium bowl, whisk together the heavy cream, milk, melted butter, garlic powder, salt, black pepper, paprika, and cayenne pepper (if using).
  4. Pour half of the cream mixture over the first layer of potatoes, onions, and cheese.
  5. Repeat the layers with the remaining potatoes, onions, and cheese, then pour the rest of the cream mixture on top.
  6. Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the potatoes are tender and the cheese is bubbly.
  7. Once done, let it sit for about 10 minutes before serving. Garnish with chopped parsley.

Notes

  • For a smoky flavor, add cooked bacon bits between the layers.
