Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 cup pineapple chunks (fresh or canned, drained)
- 1 cup barbecue sauce
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 8 hamburger buns
- 1 cup coleslaw mix (optional for topping)
Instructions
- Place the chicken breasts in the crock pot.
- In a medium bowl, combine the pineapple chunks, barbecue sauce, soy sauce, garlic powder, onion powder, black pepper, and salt. Mix well.
- Pour the pineapple and sauce mixture over the chicken in the crock pot, ensuring the chicken is well coated.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken using two forks and mix it with the sauce in the crock pot.
- Serve the shredded chicken on hamburger buns, topped with coleslaw if desired.
Notes
- For added flavor, try using teriyaki sauce instead of barbecue sauce for a different twist.
- You can also substitute the coleslaw with sliced pickles for a tangy crunch.
- For a spicier kick, add a teaspoon of crushed red pepper flakes to the sauce mixture.
