Description

A delicious and easy-to-make Crockpot Pierogi Casserole with Kielbasa, perfect for a comforting meal.


Ingredients

  • 2 cups frozen pierogi (cheese and potato or your choice)
  • 1 pound kielbasa, sliced
  • 1 medium onion, diced
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In the bottom of a greased crockpot, layer half of the frozen pierogi.
  2. Top the pierogi with half of the sliced kielbasa and half of the diced onion.
  3. Sprinkle half of the shredded cheddar cheese over the top.
  4. Repeat the layers with the remaining pierogi, kielbasa, onion, and cheddar cheese.
  5. In a separate bowl, mix together the sour cream, chicken broth, garlic powder, onion powder, paprika, salt, and pepper. Pour this mixture evenly over the layered ingredients in the crockpot.
  6. Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the pierogi are tender and heated through.
  7. Before serving, garnish with fresh chopped parsley.

Notes

  • For a vegetarian option, substitute the kielbasa with sautéed mushrooms or a plant-based sausage.
  • Add a layer of sautéed bell peppers or spinach for extra veggies and flavor.
