Ingredients

  • 1¼ cups Rice Krispies cereal
  • 1½ cups chocolate chips (semi-sweet or dark)
  • 2 teaspoons coconut oil (for melting chocolate)

Instructions

Prepare the Peanut Butter Mixture

  1. In a medium bowl, mix peanut butter, melted coconut oil, vanilla extract, and honey (or maple syrup).
  2. Fold in Rice Krispies cereal until evenly coated.

2. Fill the Molds

  1. Scoop about 3 tablespoons of the mixture into each cavity of a muffin mold.
  2. Gently press down to pack the mixture in place.

3. Freeze the Peanut Butter Base

  1. Place the mold in the freezer for 30 minutes to 1 hour, until hardened.

4. Melt the Chocolate

  1. Combine chocolate chips and 2 teaspoons of coconut oil in a microwave-safe bowl.
  2. Microwave in 20-second intervals, stirring each time, until melted and smooth.

5. Add the Chocolate Layer

  1. Spoon melted chocolate over the frozen peanut butter base.

6. Freeze Again
